The fifth release of single malt Irish whiskey from Dingle Distillery has been matured in a combination of ex-bourbon, Pedro Ximenez sherry and Madeira wine casks. Aromas of crème brulee, salted caramel and honeycomb fill the nose, complemented by notes of sun-dried raisins, blossom honey, Tiramisu and vanilla throughout the palate.
Nose: Dried fruit and chocolate peanuts, with nutmeg and ginger developing.
Palate: Honeycomb and malt, with vanilla leading into soft oak warmth. Raspberry and cherry notes grow in the background, with cinnamon appearing later on.
Finish: Mars Bars, oatcakes, dry cedar spiciness.
